Allergen testing
Allergen analyses are used to verify that food products and production environments are free of unwanted allergens. Since most allergens are proteins, the methods rely on the specific detection of these proteins.
Rapid tests based on lateral flow technology (LFD) enable immediate verification during cleaning or raw material inspections. For more quantitative laboratory analyses, ELISA methods are used. As a cost-effective complement to allergen analyses, rapid, non-specific protein tests can be used as a screening method (see protein analyses).
