Description
GlutenTox ELISA G12 is a quantitative immunoassay based on ELISA, developed to measure the immunotoxic fraction of gluten in complex and hydrolyzed foods. The method uses the specific G12 antibody, which targets the most reactive part of gliadin (the 33-mer peptide), providing high selectivity even after enzymatic degradation. UnlikeELISA LFD, thisELISA enablesELISA quantification in, for example, beer, baby food, and syrups where gluten is fragmented.
