AlerTox® ELISA

AlerTox ELISA is a quantitativeELISA for the analysis of mustard in food and raw materials. The method is based on antibodies directed against mustard proteins and measures the concentration via absorbance at 450 nm. The kit is validated for both raw and processed matrices and is suitable for heat-treated samples. The analysis provides results expressed as the equivalent content of whole mustard seeds (ppm), with the option to convert to protein content.

This method is suitable for laboratory verification and quantification in allergen control programs, particularly where trace levels need to be assessed against limit values.
