Megazyme™ Total and Free Sulfite Assay Kit

The Megazyme™ Total and Free Sulfite Assay Kit is designed for the specific and reproducible quantification of both total and free sulfite in complex matrices. Sulfites are used as preservatives with antioxidant and antimicrobial properties; the free form is biologically active, while the bound form is inactive.

The method is based on the principles of chemical reactions:

• Total sulfite: reaction with thiol groups (Ellman’s reagent)
• Free sulfite: reaction with the fuchsin/aldehyde system

The analysis is performed spectrophotometrically and can be carried out manually, using a microplate, or with an automated analyzer, providing flexibility in the laboratory setting.
