Description
The method is enzymatic and is based on the oxidation of ethanol to acetaldehyde via alcohol dehydrogenase, followed by further oxidation in which NAD⁺ is reduced to NADH. The resulting increase in absorbance at 340 nm is proportional to the ethanol concentration.
The analysis is validated according to AOAC e.g., 2019.08) and is widely used in the food and beverage industry, particularly for determining the alcohol content in products such as wine, beer, and low-alcohol beverages.
The method is fast, with a reaction time of approximately 5–7 minutes, and provides high accuracy (typically within ±2% under controlled conditions).
